Burrawang General Store. A real country local eatery, Burrawang General Store prepares and serves a high quality and innovative menu with an emphasis on local produce.
St Maur Vineyard. Small batches of Pinot Noir, Merlot and Cabernet are harvested in mid to late autumn and pruned heavily to control leaf growth, limiting the grape quantity but produce a more intensely flavoured wine. There is a cellar door and private dining room on site and our experience consists of a tasting board including local relish, crackers and fruit of the season with your wine tasting.
Dinner at Birch. A culinary highlight in the Southern Highlands, Birch offers a dining experience that is stamped with innovation and warm hospitality. The inventive and contemporary modern Australian menu is created and crafted to reflect time and place and based on what is utterly superb with growers right now. Seasonal Forage (Autumn Mushrooms & Winter Truffles)
– Arrive Penrose State Forest (late March, April, May)

Your day starts at Penrose Forest where we embark on fresh mushroom foraging with Highland local Joanne Dodd who holds a Bachelor of Agricultural Science (Soil Science and Horticulture), a Graduate Diploma of Aquatic and Terrestrial Ecology and Management, and Masters of Sustainable Agriculture. A master forager Joanne runs an urban production system called the Quarter Acre Farm in the Mittagong which is her outdoor laboratory, growing a large variety of edible flowers, fruits, vegetables, herbs and edible ‘weeds’. After a brief rundown on the pine mushrooms in the area and a demonstration of how to find and harvest your mushrooms, you head into the trees for your own unique experience of foraging. After an hour or so, and with a basket full of fresh fungi to eat we fire up the wood stove for wild cooking. Now ravenous and eager to try the freshest of mushrooms, we will pan fry a whole heap of your foraged goods to taste. Enjoy simple ingredients of butter and salt with the caramelised mushrooms and some fresh locally made sourdough bread. We also bring exotic mushroom varieties from the Li-Sun Tunnel in Mittagong for you to try as well, famous for its world-class range growing in an old railway tunnel.

As winter descends on the Southern Highlands so does the opportunity to enjoy fresh truffles. During June, July and the first half of August, we offer the opportunity to visit a local truffle farm for an exclusive experience of locally farmed and foraged Black Perigord Truffles. Upon arrival to the Truffle Farm, we start off around the open pit fires with a history of truffles, and a bit of the science in cultivating them. We then walk a short distance to the truffiere and meet the dogs and learn about scent detection. This is where the fun begins and we spend about 50 min in the truffiere, hands on digging up the delicate truffles. There are plenty of opportunities to get that instagramable photo with the dogs and the day’s treasures! We finish the tour under the awning of the property barn overlooking the truffiere in front of the fires with a meal of warm artisan bread with truffle butter, warned Truffle Brie and honey, and quiche with truffles pastry, topped with freshly shaved truffles.

The menu at Tombik has been dreamt up by the group’s executive chef Arman Uz, and is inspired by his upbringing in Tarsus in Turkey.   • Rumble – a short 15 minute stroll from Darling Harbour.
    Celebrating the four classic flavours of Southeast Asian culinary culture – sweet, salty, spicy and sour – Rumble is now open at The Star Sydney, in the waterfront suburb of Pyrmont.
